Restaurant service benchmarks: what good actually looks like

Greeting inside 30 seconds, first order inside 4 minutes, a check-back after every main. The numbers worth holding your team to, and why most venues miss the easy ones.

Benchmarks are only useful if they are specific enough to fail. “Good service” cannot be measured. “Acknowledged within thirty seconds of entering” can, and it is the single strongest predictor of how a guest rates the whole meal.

The numbers

  • Acknowledged at the door: under 30 seconds. Not seated — acknowledged. Eye contact counts.
  • Seated to first contact: under 4 minutes
  • Drinks delivered: under 5 minutes from ordering
  • Check-back after the main lands: once, between 60 and 120 seconds in
  • Bill delivered after it is requested: under 4 minutes
  • Restrooms checked and stocked: every 60 minutes during service

Where venues actually lose points

In the reports we see, the greeting and the food almost always score well. The losses cluster in two places: the check-back after the main course, and restroom condition after 20:00. Both are cheap to fix and both are invisible to an owner who is in the building — the check-back happens when you are in the kitchen, and the restrooms are fine at 18:00 when you last looked.

Weight them properly

If every question counts the same, a venue can score 85% while failing the one thing that loses the table. Weight the questions that cost you repeat custom — the greeting, the accuracy of the bill, the check-back — and let the decorative ones count for less.
